One kind is fat, meat and berries / vegies in a cake format. This has a higher fat content. This cake is ate during travel and not added to other food. It is only eaten when either there just wasn't enough fresh kill to go around or when there wasn't any fresh kill. It was also used as winter storage. Jerky and dried nuts / berries / vegies were kept, but pemmican was also made with the leavings or small pieces of said items. It helped to extend winter storage and to keep the fat. Fat cakes were also kept to add to stews to help keep the carbs and calories up although they didn't know what that was. Just that you got sick without any fat in your diet. This type could also be cooked in a frying like manner to make hot pemmican if it is cold out. Even 200 years ago we knew that warm food was better than cold food during the winter months. Normally the fat used optimally would be bear or deer fat. Not elk or bird. Bear fat takes longer to go rancid than the others once it is clarified. You put a little in a pot, some water and you boil. Then you let cool. The clean fat is on the top and the disgusting stuff is on the bottom. Rabbit fat and all fat was rendered and used. Some used it for hair dressings, food additives, sealant for boots and tipi's or wigwams... Parka sealant.... Some had medicinal powers, if you mixed the herbs to put on a cut with one kind of fat it worked better than a different kind of fat... Etc, etc. Another kind pf pemmican doesn't have a lot of fat. It is powdered jerky, berries and vegies loose and stored in a pouch. There isn't any fat added to this and it is used in a pouch and either eaten as in in the semi-powdered form or added to water and boiled. This one was generally carried by people in the dry southwest / Mexico area. It was easy to get game during most of the year and pemmican only supplemented the game or if you had to travel you didn't have to go far between hunting to get the fat from a fresh kill. Emily T.
